Pumpkin Chocolate Chip Cookies

we still have awhile before fall arrives, but i’ve been craving these pumpkin cookies and just couldn’t wait any longer to whip up a batch.
INGREDIENTS
• 1 c. sugar
• 1 c. libby’s pure pumpkin
• 1/2 c. shortening
• 2 c. flour
• 1 tsp. baking powder
• 1 tsp. baking soda
• 1 tsp. cinnamon
• 1/4 tsp. salt
• 1/2 c. semi-sweet chocolate chips (don’t feel bad for using more)
• 1/2 c. nuts (i use walnuts)
DIRECTIONS
1. preheat the oven to 350 degrees. 
2. mix the sugar, pumpkin and shortening together well.
3. stir together the flour, baking powder, baking soda, cinnamon and salt.
4. mix together with the first three ingredients.
5. stir in the chocolate chips and nuts.
6. bake for about 12 minutes.
7. then cool and enjoy!
like any other cookie, these go fast in our house, so we usually double the recipe!

    YUMMY!!!! I love everything 'pumpkin' and am always so disappointed pumpkinpuree still hasn't found its way on the shelves in shops around here. Last year, I made my own pumpkinpuree to use in several recipes but I think it was not as firm as the canned puree, mine was more runny which sometimes made the dough too moist. Wish I could try your pumpkincookies. You enjoy them for me!

    Our favorite are pumpkin chocolate chip cookies except with 3 ingredients: spice cake mix, pumpkin pie filling, and chocolate chips.

    If i cant find pumpkin puree in the supermarket… (i'm in Australia and cant say i've ever seen it!) can I just puree my own pumpkin for the recipe?

    So I just made these. Are you kidding me? Whoa. So. Good!!!! As I was making these, the shortening looked crazy gross as it was mixing, then at the end of the mixing, I realized there wasn't any eggs, which I also thought was strange. So, as I slide the first sheet into the oven, I was thinking they were going to be a waste of ingredients. I could not have been more wrong! these are delish! Thank you for sharing them!

Spicy Chex Mix

monday we shared a fun little father’s day project, filled with chex mix. 
spicy chex mix…

Recipe from BettyCrocker.com

Prep Time: 10 min
Total Time: 1hr 25 min
Servings: 24
INGREDIENTS
  • 1/4 cup butter or margarine
  • 1 tablespoon Worcestershire sauce
  • 1 1/4 teaspoon seasoned salt
  • 2 to 3 teaspoons red pepper sauce
  • 3 cups Corn Chex cereal
  • 3 cups Rice Chex cereal
  • 3 cups Wheat Chex cereal
  • 1 cup mixed nuts
  • 1 cup pretzels
  • 1 cup bite-size cheese crackers
STEP ONE
Heat oven to 250 degrees
STEP TWO
In ungreased large roasting pan, melt butter in oven. Stir in Worcestershire sauce, seasoned salt and pepper sauce. Gradually stir in remaining ingredients until evenly coated. 
STEP THREE
Bake uncovered 1 hour, stirring every 15 minutes. Spread on paper towels to cool, about 15 minutes. Store in airtight container. (Or Tie Box)

Cinco de Mayo Meal Ideas

in honor of cinco de mayo we bring you some yummy mexican dishes we’ve found (on the web) tried and loved.
first up are these Creamy Chicken Enchiladas that i am craving at this very moment.

    Best Bites Taquitos are a staple in our house too, but we are saving them for Saturday night. Tonight we are doing cream cheese enchiladas and mango salsa w/ chips. Gotta use all those inexpensive mangos I couldnt resist at the store the other day!!

    We are eating mexican rollups. Use any flavored tortilla and roll it around a mix of cream cheese, veges (like tomatoes, black beans, and corn), taco seasoning, and cilantro. Yummy. I dip it in guacamole.

    Both those enchilada recipes sound incredible! I don't like regular enchiladas with that red sauce so those variations are right up my alley.

    Purely by coincidence….we had Taco Soup (although it's 90+ degrees outside). It's easy because I throw it all in the crockpot in the morning, and my kids love it!

Nacho Cheese Dip

My new go-to recipe. Super easy and really good.

Nacho Cheese Dip

what you need:

  • 2 (10 oz) cans of Rotel Original
  • 2 lb block Velveeta cheese
  • 1.5 lb ground beef
  • small block of pepper jack cheese (optional)
  • McCormick Taco Seasoning
  • Tortilla chips

directions:
 
  • heat a crock pot on high
  • cut velveeta block into pieces and add to crock pot
  • shred pepper jack cheese and add to crock pot
  • brown ground beef, drain excess grease, add seasoning and simmer for 5 minutes
  • add browned beef to crock pot
  • add both cans of rotel to crock pot
  • stir… once bubbly, turn down to low
  • enjoy

    I've never thought to add taco seasoning, but this sounds yum! Amd, I love that it is still the same Rotel dip, just with a kick!

    Now let me give you a little recipe that you can use up any leftover queso (nacho cheese)…

    2 cups nacho cheese
    1 can cream of chicken soup
    1/2 cup sour cream
    1/2 cup milk

    Mix all these ingredients together (may need to melt the cheese a little to get it mixable). Pour over 3-4 chicken breasts in crock pot, cook on low about 6 hours. Take chicken breasts out and shred the chicken up, put back in crock pot and cook on low for about 15 minutes. Serve over rice.

    My sister-in-law makes the best homemade queso but she makes a TON of it. We can only eat it for so many days, so I started using it in the above recipe, which I made up out of desperation (you know, you are running behind, nothing really planned, so you throw a bunch of things together). The best part is the chicken comes out so moist and delicious!

    we had that all the time growing up… so good! the updated version is to use a brick or 2 of cream cheese instead of velveeta (and i love it with pork sausage instead of growned beef). believe it or not, it's even better 🙂

    I have a similar recipe, but I use ground sausage for a little kick. I also put in cream of mushroom soup (i know, sounds weird) b/c it makes it so it doesn't harden at the top.
