Combine flour, sugar, baking
soda, cinnamon, and salt in a bowl.
Mix egg, oil, milk, lemon juice, and
vanilla extract in another bowl.
Stir into dry ingredients until just
moistened. Fold in zucchini & chocolate chips.
Using a spoon, fill muffin cups 2/3 full:
Bake at 350 degrees for 20-25 minutes (until toothpick comes out clean)
*Makes 12 muffins*
These muffins are perfect for either breakfast, lunch or an afternoon snack.

Those looked so yummy I ran out and bought some zucchini. I made them and my kids asked for seconds…even though I already disclaimed they had zucchini in them! Thanks for the yummy and easy recipe!
