Happy Spooktacular September! Michael from Inspired by Charm here. I can’t tell you how excited I am to be back on Eighteen25. This is my fourth year collaborating with Jodie and Jen on this spectacular month of spookiness, and the ideas and fun just keep getting better and better.
If you follow my blog, you know that when fall rolls around, pumpkin is something I often write about. From decorating to cooking, I’m slightly obsessed with pumpkin. So, I figured it was only appropriate to continue the goodness over here.
Whether I’m baking, decorating, or DIYing, I try to share ideas that belie their simplicity by looking great or tasting super delicious. One of my favorite things to create are quick and easy dishes that don’t require a recipe. These are yummy little ideas you can store in your brain and simply pull out when needed. These Pumpkin Ice Cream Sandwiches are just that.
I don’t know what the weather is like where you are, but we are having a gloriously warm fall in Central PA and I’m revelling in it. This “recipe” is for those warm fall days when you’re craving pumpkin, but still have the desire to keep cool. Now, take note, these are about to get really complicated. *insert sarcasm here*
Pumpkin Ice Cream Sandwiches
Here’s what you’re going to need:
Gingersnap cookies (homemade or store-bought)
Pumpkin ice cream
Festive sprinkles
Got it? Let’s get going. Start with the cookies. I’m using store-bought because they’re super easy. Plus, when you sandwich ice cream between them, it really doesn’t matter. However, if you have a great homemade recipe, go with it.
Next, let your ice cream sit on the counter for a few minutes to soften a bit. This will make it easier to smush between the cookies.
When it’s ready, place a scoop of ice cream on the bottom of one cookie, top it with another, and press together.
Roll the edges of the ice cream in some sprinkles and then pop them in the freezer to harden before serving.
That’s it, friends.
This festive fall treat will keep you cool and make your pumpkin-lovin’ belly happy. It’s a win-win!
