Apple, Goat Cheese and Cranberry Salad

It’s a great day because we get to share TWO of Cindy Larkin’s amazing recipes! If you missed it, this morning she shared this Thanksgiving Sandwich that looks delicious. Now she is sharing a beautiful salad that will WOW your guests at your Thanksgiving Dinner this week. It looks simple enough that even I could put it together! Enjoy!

INGREDIENTS:
2 granny smith apples
1 cups power greens (chard, spinach, and kale)
2 oz. goat cheese
1/4 cup pecans
1/3 cup dried cranberries
Pomegranate blueberry dressing (for drizzling)

1.  Cut apples into thin slices. Don’t worry about coring the apples. It looks prettier without it 😉

2.  Layer of greens

3.  Layer of apple

4.  Layer of goat cheese crumbles

5.  Layer of pecans; loosely chopped

6.  Layer of dried cranberries

7.  Repeat layers, 3 times

8.  Drizzle with dressing

Apple, Goat Cheese and Cranberry Salad. So delicious and looks amazing!

    How do you eat this? Like, do you use a fork and knife and cut through it? Do you just pick up a piece of apple?
