Halloween Chocolate Waffle Cookies

Happy Spooktacular September! I get so excited to decorate for Halloween, and this month long series gets me even more jazzed! My name is Kristen Duke, and I share all sorts of fun over at Capturing Joy, and the Eighteen25 girls are some of my faves in all of blogland, and real life. I started my blog a few years ago as a portrait photographer sharing sneak peeks and photo tips, and wrote a little book called Say NO to Auto. I then decided I wanted to share more than just photography and now post about home DIY projects, favorite family recipes, home and kids printables, Parties, What I Wore, travel adventures, and even my love story. It’s just a mesh pot of a good time.

Today I’m sharing with you a fun new treat that my kids LOVE! They will not hesitate to let me know if something I make is “thumbs up” “thumbs down” or “one up, one down.” They gave these Halloween Chocolate Waffle Cookies two thumbs up! I think the idea of making cookies in a waffle iron was pretty exciting to them, but sprinkles don’t hurt, either.

I’m sad to say that I’m not so great at making that cool melted chocolate look pretty, but it’s fun and festive nonetheless. I used some Halloween sprinkles that included a black spider, so they fill in the waffle holes in some slots above. Can you tell they are spiders??
I used a thicker chocolate cookie recipe, and plopped it into the waffle iron like I would batter. I did find that my deeper waffle iron cooked them better than my standard waffle iron.
Here is a shot of the back of the waffle cookies to show you that they truly are waffles.

Halloween Chocolate Waffle Cookies
 
A fun holiday treat the kids will LOVE to help make.
Ingredients
  • 2 ounces unsweetened chocolate squares
  • ½ cup butter (1 stick)
  • 2 eggs
  • ¾ cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • melting chocolates
  • sprinkles
Instructions
  1. Combine chocolate squares and ½ cup butter in a glass dish.
  2. Microwave on high for 30 seconds, stir, 30 more seconds as needed.
  3. Stir. Set aside.
  4. Combine eggs, sugar, and vanilla in a bowl; beat until blended.
  5. Add flour and melted chocolate mixture. Mix well.
  6. Preheat waffle iron. Drop dough by 2 teaspoonfuls onto iron.
  7. Close iron, and bake for 1 to 1½ minutes or until done.
  8. Once cooled, melt chocolate wafers (30 sec., stir, 30 sec.) to dip or "paint" onto waffle cookie.
  9. Sprinkle as desired.
  10. Recipe Yields 8 large waffle cookies

    Just like anyone else, September excites me for the coming holidays. Since Halloween is coming soon, been searching to find the coolest 2014 Halloween recipes . Some of yours are classic but definitely will still be hit for this year's Halloween season. Thanks mate!
