I’d like to blame our love for pina colada on our Mom who would freeze
crushed pineapple and eat it by the bowl full while she was pregnant with us.
It’s really not a bad thing. It’s quite good actually!
One day while I was browsing the aisles of Target I found the cutest popsicle mold. I knew exactly what I wanted to make…

we got together and mixed and measured until we thought we had a pretty tasty treat!


Mix Together:
20 oz can of crushed pineapple
11.3 oz can of Jumex coconut-pineapple nectar
1/2 C sweetened condensed milk
3/4 C coconut
My cute popsicle mold I bought was a big disappointment. So on my next batch I filled small dixie cups 3/4 full and added the stick after about an hour.

yummy! all that’s missing is a tropical beach and a hammock! 🙂
