Today I decided to share a cookie recipe. Every September I host Fall Cookie Week on my blog. Each day of that week I share a fall-inspired cookie recipe. There’s also usually a giveaway amid all of the deliciousness. To make Fall Cookie Week even more special, I’m adding this bonus recipe as part of Spooktember Spectacular.
When it comes to baking, one of my favorite flavor combinations is chocolate and peanut butter. This recipe starts with a traditional peanut butter cookie dough. Then, a piece of Dove chocolate is added to each of the cookies as they come out of the oven.
Once the chocolate is nice and melted from the warmth of the cookie, you use a knife to spread the chocolate around. Then, festive fall / Halloween sprinkles are added for color and fun.
These cookies are so delicious and easy to make. If you’re doing any seasonal entertaining, they bring a nice touch of autumn to your table.
Let me teach you how to make them.
Peanut Butter Sprinkle Cookies
Here’s what you will need:
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
1 cup smooth peanut butter
2 teaspoons vanilla
1/2 cup granulated sugar (for rolling the dough)
3 (10 oz) bags of Dove milk chocolate
Sprinkles in fall colors
Begin by preheating your oven to 375 degrees F.
Then, in a medium sized bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, beat your butter with a hand mixer for about 30 seconds. Then, add the sugar and brown sugar. Beat again for about 3 minutes. Next, add the peanut butter and vanilla. Beat until smooth. Finally, beat in each egg, one at a time.
Once combined, slowly add the dry ingredients and mix until just combined.
Roll the dough into 1-inch balls; then roll them in granulated sugar. Place evenly on a baking sheet. Bake for about 8 minutes or until the cookies just begin to lightly brown.
Remove from the cookie sheet and immediately press a chocolate into the center of each cookie. Wait a few minutes; then using a knife spread the chocolate. Top with sprinkles.
That’s it, friends! A tasty cookie perfectly dressed for the fall.
