Banana Bread with Cream Cheese FrostingHello Friends!!! Alanna here from Two Sisters and a Story. I am thrilled it is finally warming up and school is out. This gets me in the mood to do little finger food parties with my kids. The other day I was making my typical banana bread that we usually eat for breakfast but was craving more of a dessert type banana treat and thought of a carrot cake and how I love the cream cheese frosting and then realized “HELLO…why have I not tried banana bread with cream cheese frosting?!?!?” They are a match made in heaven. These are perfect for any get together, or tea parties, or lets be honest… just to have on hand. I hope you love them as much as we did at our house. ENJOY!!!

Banana Bread with Cream Cheese Frosting

Ingredients
  • ½ cup margarine, softened.
  • 1 cup white sugar.
  • 2 eggs.
  • 1½ cups mashed banana.
  • 2 cups all-purpose flour.
  • 1 teaspoon baking soda
  • 8 OZ. Cream Cheese {softened)
  • 1 teaspoon vanilla
  • 2 cups of confectionery sugar
  • Leaves for decorating
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 6 x 3¼ inch pans or one 9x5 inch pan.
  2. Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined
  3. Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 40 minutes (or till toothpick comes out clean).
  4. Remove from pan and let cool
  5. Cream the softened cream cheese add in vanilla until incorporated
  6. Add in powder sugar a little at a time until it is at a consistency you like. ( i like mine to be at a stiff peak)
  7. Place cream cheese frosting in a piping bag with whatever tip you would like to use to decorate with
  8. slice cooled banana bread into about 1 inch slices then cut those slices in half. Fill one side with frosting and place the other slice of bread on top. add some more frosting on top for decoration and add a mint leaf and you have a gourmet looking and super tasty dessert ready to go.
  9. KEEP REFRIGERATED this will only keep for a few days. Best if used the same day
