Fruity Pebble Sugar Cookie Bars

Ingredients
  • For Sugar Cookie Bars :
  • 1 cup butter, softened
  • ¾ cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 TBSP milk
  • 2 large eggs
  • ½ tsp baking powder
  • ½ tsp cream of tartar
  • ½ tsp salt
  • 4 cups all purpose flour
  • For Frosting:
  • 5 TBSP butter, softened
  • ½ cup sour cream
  • 1 tsp pure orange extract
  • 4 cups powdered sugar
  • ⅘ TBSP milk
  • 2 - 2½ cups Fruity Pebbles Cereal
Instructions
  1. For Bars:
  2. Preheat oven to 350 degrees.
  3. In a standing mixer or large bowl, cream together butter, oil,
  4. granulated sugar and powdered sugar for 2 minutes on medium speed.
  5. Add in milk and eggs and mix until well combined.
  6. In a separate medium bowl whisk together baking powder, cream of tartar salt and flour.
  7. Slowly add in a little flour mixture while beating and mix until just combined.  Do not over beat.
  8. Lightly spray a standard baking sheet with oil.
  9. Pour batter into the baking sheet and evenly spread out.
  10. Bake for 12-15 minutes and an inserted toothpick comes out clean.
  11. Cool 20 minutes before frosting.
  12. For Frosting:
  13. In a standing mixer or large bowl cream together butter and sour cream until smooth.
  14. Add in orange extract.
  15. Slowly add in the powdered sugar until completely incorporated.
  16. Pour in 1 TBSP at a time of milk until consistency is about the same as cake batter.  Not too runny, but pourable.
  17. Evenly spread frosting over dough and immediately sprinkle with Fruity Pebbles Cereal.
  18. Gently press the cereal into the frosting to make sure it sticks.
  19. Best served chilled until ready to serve.
